
I love a barbecue, and now the sun’s out, of course each and every English person is taking advantage by having barbecues whenever and wherever they can. But with lots of barbecues comes lots of fatty food. Whilst I love a good burger, it can start to feel a little unhealthy, and there is only so much salad I can eat.
Thankfully, my dad starting making super simple and really tasty barbecued stuffed peppers, which make a plate of summer food seem so much healthier.
All you have to do is:
- Slice the peppers in half and take out the pips.
- Put a drizzle of olive oil, some chopped up tomatoes and garlic and a sprinkling of basil flakes (or fresh basil if you have it) into each pepper half. You can also add some anchovies if you’re a fan.
- Then you all you have to do is barbecue or bake in the oven for around half an hour, until the pepper is nice and soft.
It’s as easy as that!
